Farmers Market Risotto

Ingredients:

2 cups Arborio rice

1 cup of white wine

2 tbs extra virgin olive oil

1 tsp sea salt

1 tsp cracked black pepper

1 tbs minced garlic

½ sweet onion small diced

Farmers market veggies small diced such as:

(you can add as many or as little of these varieties as you want in your risotto, 1/8 cup diced each)

  • Yellow squash
  • Patty pan squash
  • Zephyr squash
  • Zucchini
  • Blanched field peas
  • Heirloom tomatoes

 

Method:

In a medium-sized frying pan bring up extra virgin olive oil and add onions and garlic, saute until onions are becoming translucent, about 3-4 minutes.

Add the rice and cook, stirring occasionally, until the kernels start to crackle, about 1 to 2 minutes. Pour a cup of white wine and reduce.  Pour a ladleful of broth over the rice and let simmer, stirring constantly until the rice absorbs the broth and the bottom of the pot is nearly dry. Add all diced vegetables and then continue adding broth a little at a time, until the rice is nearly al dente, about 20 minutes. Season with salt and pepper and serve. If you want the dish to be vegan, do not add cheese. If vegetarian will do, you can add shaved parmesan cheese to cover.
